Green Goddess Salad - our favorite recipe in May!

Preparation for 5-6 people takes only 10 minutes.
The base:
- one cucumber
- 1/2 pointed cabbage
Both are finely chopped and placed in a bowl.
The dressing:
- 1 bunch of parsley
- 1 bunch of basil
- 1 - 2 cloves of garlic
- 3 tablespoons of olive oil
- 1 tablespoon of agave syrup - or maple syrup
- 1 juiced lemon
- Salt, chili flakes to taste
- a handful of nuts, e.g. cashews
- a little water to thin
Finally, all you have to do is blend all the dressing ingredients until a creamy consistency is achieved, and then mix everything together.

With this quote, Helena captures exactly what initiated the founding of Our Greenery. Already on our anniversary, we shared our story on Instagram, now again in brief. Daniel and Florian, today CEO and CTO of Our Greenery, were confronted for over two years by their sick mother and daily visits with the food served in the hospital. The nutrition offered on site did not seem to them to be an efficient contribution to the healing and recovery of the patients. At this point, it is wonderful to realize that the connection between ๐ก๐๐๐ฟ๐ถ๐๐ถ๐ผ๐ป, ๐๐ฒ๐ฎ๐น๐๐ต ๐ฎ๐ป๐ฑ ๐๐ฒ๐ฎ๐น๐ถ๐ป๐ด, the cornerstone of Our Greenery, has reached our community. Not only the environment benefits from a green diet, but also one's own well-being and health!
Of course, you don't have to be too strict with yourself; even one vegetarian day a week makes a big difference, but more on that later. Helena sees it exactly the same way and lives by the motto "90% Clean Eating & 100% Good Vibes!".
She describes herself as a "health enthusiast and whole grain lover without compromise!". She lives her motto, among other things, with the help of delicious dishes that she also shares with her community on Instagram at @eating.cheating. She has been using her table garden since 2022, and we have been delighted to regularly see how she conjures up delicious recipes with her microgreens ever since. How healthy is lettuce really? A closer look at supermarket lettuce ๐
Anyone who consumes a lot of lettuce should ๐ฏ๐ฒ ๐ฐ๐ฎ๐ฟ๐ฒ๐ณ๐๐น ๐ต๐ฒ๐ฟ๐ฒ! Many are certainly aware that pesticides are used in the cultivation of lettuce, vegetables or fruit. But today we go a step further. Apart from the fact that residues of pesticides and even heavy metals from the environment can affect lettuce, the nitrate contained can potentially trigger a ๐ฐ๐ฎ๐ป๐ฐ๐ฒ๐ฟ-๐ฐ๐ฎ๐๐๐ถ๐ป๐ด ๐ฒ๐ณ๐ณ๐ฒ๐ฐ๐.
Nitrate is found in the soil and is absorbed by plants to obtain energy. However, if the growing conditions are not optimal due to insufficient sunlight, the nitrate remains in the plant, especially in the outer leaves and the stem. When humans then consume the nitrate-containing lettuce, nitrite is produced by bacteria in the mouth. In combination with protein components, ๐ก๐ถ๐๐ฟ๐ผ๐๐ฎ๐บ๐ถ๐ป๐ฒ๐ are then formed, which could be carcinogenic. In addition, the oxygen supply to the organs may deteriorate. Particular caution is advised with iceberg lettuce, lamb's lettuce and arugula, where nitrate levels range from ๐ญ๐ฌ๐ฌ๐ฌ ๐๐ผ ๐ฐ๐ฌ๐ฌ๐ฌ ๐บ๐ถ๐น๐น๐ถ๐ด๐ฟ๐ฎ๐บ๐/๐ธ๐ด (Icking & Rรถsch, 2023).
What about pre-cut salads? Are pre-cut salads healthy? In fact, they pose a risk for the ๐ณ๐ผ๐ฟ๐บ๐ฎ๐๐ถ๐ผ๐ป ๐ผ๐ณ ๐ฝ๐ฎ๐๐ต๐ผ๐ด๐ฒ๐ป๐ such as salmonella, hepatitis A, the norovirus and many more. For pregnant women, there is therefore a recommendation from the NDR ๐ป๐ผ๐ ๐๐ผ ๐ฐ๐ผ๐ป๐๐๐บ๐ฒ ๐ฝ๐ฟ๐ฒ-๐ฐ๐๐ ๐๐ฎ๐น๐ฎ๐ฑ๐. This is because there is a risk of listerine, which can harm the child or even cause a miscarriage.
Why are pre-packaged salads susceptible to pathogens?
Because they are already cut, the natural protective film of the plants is damaged. As soon as the lettuce is cut, ๐ฐ๐ฒ๐น๐น ๐๐ฎ๐ฝ escapes. This attracts germs. In addition, the typical plastic packaging often has a ๐ต๐๐บ๐ถ๐ฑ ๐ฐ๐น๐ถ๐บ๐ฎ๐๐ฒ, which further promotes the formation of germs (NDR, 2022).
General tips to avoid these aspects include washing, immediate consumption after cutting, and buying in season.
This information may seem alarming at first glance, but don't worry! We offer you the easiest way to avoid all disease-causing germs and harmful substances. With both our table garden and our indoor garden, you can eat completely self-sufficiently and healthily. There is no pressure to consume salads quickly, the current season does not have to be taken into account, and you can eat them directly after harvesting. This eliminates the risk of escaping cell sap attracting germs. We also do not work with pesticides. All the mentioned damages that supposedly healthy foods bring us simply disappear. And with your own harvest shortly before consumption, all nutrients are still contained, resulting in an improved taste. And don't worry, thanks to our simply designed technologies, a green thumb is not required!
Finally, a little tip: Vitamin C can counteract the formation of nitrosamines. So, even if you want to make small steps towards improvement, you will find what you are looking for with us!
